Superfood Recipe #2: Balsamic Kale

Remember my quest to eat healthier? Well part of that involved buying a big bag of Kale. I threw it into my miso soup and then made this tasty side dish for dinner one night. I loved it! Zane wasn't a huge fan of the balsamic taste but liked the kale. I thought that the balsamic vinegar really helped with the bite that kale usually has on it's own.

As you might remember Kale has super powers at lowering cholesterol, lowering cancer risk (for bladder, breast, prostate, ovary and colon cancer), detoxifying your body and decreasing inflammation.

Balsamic Kale
(makes about 4 servings)

Ingredients:
1 bunch of kale, coarsely chopped (I bought a package of pre-washed/chopped kale)
1 clove of garlic, minced
1 tablespoon olive oil
2 tablespoons balsamic vinegar
Sea salt and ground black pepper to taste

Rinse and drain the kale. Cook the kale in large, covered saucepan over medium-high heat until its volume reduces by about half (the water from rinsing the leaves will suffice to steam the kale, so no extra water necessary). Stir in garlic, olive oil, vinegar and salt and pepper and let cook for about 2 more minutes. Don't over cook - it's nice when it's a little crunchy.
