I love ethnic food!!! And food from other cultures can be very nutritious and incorporate ingredients we don't usually know what to do with. Tabouleh is one such food. It consists primarily of bulgar, a whole grain that is high in protein, fiber and low in calories and fat. It has fewer calories, less fat and way more fiber than brown rice!
Tabouleh
(makes ~6 one cup servings)
1/2 cup bulgar
2 diced tomatoes
2 cups (or more!) fresh parsley leaves, chopped
1/4 cup fresh mint leaves, chopped
1/4 cup chopped green onions
1 clove of garlic, diced
2 tablespoon fresh lemon juice
1 tablespoons olive oil
salt and pepper to taste
Prepare bulgar as directed on the packaging. Mine involved boiling 1 1/4 cups of water, stirring in the bulgar and letting it stand for about 20 minutes, covered. Basically, you want all of the liquid absorbed (you can pour off a little at the end if you need to).
Whisk together the garlic, lemon juice and olive oil and pour over the bulgar. Stir in the remaining ingredients. Serve chilled.
This was a huge success at our home - Zane really liked it. I can't wait for summer and growing my own herbs so I can just grab the fresh herbs from my pots!
