My parents and brothers are all trying a more plant-based diet to one extent or another. We have a family history of heart disease and specifically high cholesterol.
Anyway...here are a few of the recipes I have mentioned to you guys:
Emeril's Vegetarian Chili
We LOVE this chili. Just leave off the sour cream garnish and it's completely plant-based. The avocado garnish is delicious! Oh and the "essence" garnish is totally unnecessary.
Spicy Lentil Soup
Again, just don't garnish with sour cream. This soup is delicious and has a great kick, which should make Dad happy :o)
